Longjing 龍井, also named as Dragon Well tea, is one of the most famous Green Tea having rich heritage with more than 1500 years of history. It is always on the top position among the 10 most famous Chinese Tea. It is one of the finest types of green tea in China, Longjing tea is known for its emerald color, beautiful flat shaped leaves, sweet taste with perfect combination of bean and floral notes.

The Qian Tang Longjing from this year’s batch, is from Fuyang, Hangzhou. Nestled near the West Lake area, Fuyang falls within the Qian Tang area. This year’s Qian Tang Longjing showcases exceptional aroma of chestnuts and freshly floral notes. Bi Luo Chun 碧螺春 is one of the 10 most famous Chinese Tea, with more than 1000 years of history. It is originated in Dongting Mountain, Taihu Lake in Su Zhou, Jiangsu province. Taihu Lake is one of the third largest fresh water lake in China, the production area of Bi Luo Chun is divided as East Moutain (Dong Shan) and West Mountain (Xi Shan), which is the eastern and western peninsula of the Taihu Lake respectively. This first flush batch of Tea here is made of material of one bud and one leave, it is special in its snail shape like the “Bee’s legs”, it is covered with white pekoe, you will find the liquor looks like a mist floating with pekoe in the first few steeps, create special umami and sweetness.

Wu Niu Zao 烏牛早 is the earliest harvested Green Tea originated in Wu Niu Town in Yong Jia, Zhejiang; having history of more than 400 years. As its name indicated, “Zao 早” means “early”, it is harvested in very early Spring, starting from mid of February, a month prior to Longjing and Bi Luo Chun Tea. The appearance and taste of Wu Niu Zao is considered to be similar to Longjing Tea, as people found it difficult to distinguish two of them, sometimes it is being sold as faked Longjing by the market. In fact, Wu Niu Zao is having some apparent characteristic, when comparing with longjing. Its dry leaves is green, fat and short, but don’t mixed up with the early harvested Longjing, which is also having fat buds; its taste is relatively lighter than longjing, it is apparent in its nutty notes with a hint of refreshing vegetal notes.

Huang Shan Mao Feng 黃山毛峰 is one of the 10 most famous Chinese Tea, originated from Huang Shan since Qing Dynasty (1644 – 1912). Its name “Huang Shan” indicated its place of origin – Yellow Mountain (Huang Shan) in Anhui; while Mao Feng is translated as “ Fur Peak”, as the tea is made of fine and downy tea leaves full of white pekoe.

Yellow Mountain is a famous forest-covered tea mountain situated in Fu Xi Xiang of Anhui, located in 30° north latitude. It is high in altitude with over 800m in average, the humid climate, good soil condition, and natural mountain landscape created a favorable natural growing environment for tea to grow. In 1875, Huang Shan Mao Feng is invented by a merchant called Mr. Xie Zheng An. He opened a Tea farm called “Tian Hu Tea Garden” in Cao Xi 漕溪, situated in the southern part of Yellow Mountain, between 600-800m above sea level. It is originally being called “Yun Wu” Tea, which means “Cloud and Mist Tea”, as it is being grown in high mountain, surrounding by cloud and mist. When talking about Green Tea, Glassiness may be the first word come in mind, but Huang Shan Mao Feng can be considered as an elegant Green Tea with high profile of sweetness, low astringency and not grassy at all.

Meng Ding Gan Lu 蒙頂甘露, is one of the oldest and finest tea from Meng Ding Mountain since West Han Dynasty, with more than 2000 years of history. There are two famous curled-shaped green, one is Bi Luo Chun, and the other one is this beautiful Meng Ding Gan Lu. It is also the earliest green tea in curled-shape, which is due to the unique making process of “three frying and three rolling” – which means it undergone the steps of pan-frying and rolling for three times. Meng Ding Gan Lu is considered as a premium kind of green tea through the ages, and once being served as Tribute Tea to the Emperor in Tang Dynasty.

Meng Ding Mountain, a renowned tea mountain located in Ya’An of Sichuan, reaching altitudes more than 1400m above sea level and annual rainfall more than 2000mm, creating a favorable growing environment for Tea. The harvest time of Meng Ding Gan Lu is relatively earlier than other Green Tea like Longjing and Bi Luo Chun, it is made of fine quality of tea buds or one bud one leaves material harvested in early Spring. Its name – “Gan Lu” means “Sweet Dew”, which indicates its delicate and refreshing sweetness. It is described as having three main characteristics, “beautiful shape”, “high aroma”, and “refreshing taste”.

Anji Bai Cha 安吉白茶, is a famous kinds of green tea from Anji, Zhejiang province. Its name “Bai Cha” means “White Tea” in Chinese, but it does not means it is a kind of white tea, It is actually categorized as green tea according to its making process. The Anji Bai Cha we chosen this year is the first flush batch of tea harvested on high mountain area in late of March. Although the weather is relatively cold this year, the tea farmer insist not to use any agricultural chemical to speed up the sprout of the tea, so this first flush batch of Anji Bai Cha is harvested a bit later than last year. The tea is made by a skillful tea maker with more than 30 years of tea making experience, and the quality of this batch of first flush tea do amazed us on how sweet and refreshing it is.

Types of Green Tea (Green-killing method): Hong Qing (烘青) – Baked Green Tea

En Shi Yu Lu 恩施玉露, translated as En Shi Jade Dew, is the only steamed green tea in China, originated from Enshi country of Hubei. It is special in its green killing method, which is being processed by steaming to stop the oxidation, the same way as the Japanese green tea. The name “Yu Lu” translated as “Jade Dew”, which comes from its characteristics of “Three-Jade” – jade-colored dry leaves with white and silvery pekoe, jade-colored liquor and wet leaves. It also shared the same name as the Japanese Gyokuro tea, both of the Chinese and Japanese character “玉露” are the same, so many people considered Enshi Yu Lu to be the “Chinese Gyokuro tea”. In fact, they have similar characteristics but are definitely not the same, as their variety and the cultivation method is totally not the same. The dry leaves of Enshi Yu Lu is tightly rolled into needle shape and in dark green colour. As it is being processed by steaming, it do taste a bit similar to the sencha-savoury notes, but it is not that strong in its vegetal notes like the Sencha, it taste more like a sweet and buttery tea, with floral, nutty, green bean, dried seaweed notes.

Types of Green Tea (Green-killing method): Zheng Qing (蒸青) – Steamed Green Tea

Yang Xian Xue Ya 陽羡雪芽 is a premium kind of ancient Green Tea originated from Yixing since the Eastern Han Dynasty (25 AD – 220 AD). You may have heard about the famous Yixing Zisha Clay Teapot. This Tea is also from the famous heavens of Purple Clay Teapot – Yixing – a city located in Jiangsu province. “Yang Xian” is actually the ancient name of Yixing, and “Xue Ya” means snowy sprout.

The recorded history of Yang Xian Xue Ya is roughly around 2000 years. Lu Yu – the Sage of Tea, has mentioned Yang Shan Xue Ya in the Tea Bible, he described it as an aromatic tea which can be served to Kings. It is then became a kind of Tribe Tea for the Royals in Tang Dynasty. The name of Yang Xian Xue Ya is named after a poem line “雪芽我為求陽羡” written by Su Dongpo蘇東坡- a famous Chinese Poet and Writer in Northern Song Dynasty. This beautiful line indicated the long history of this tea and discribed how beautiful the Tea is.

This beautiful “Snow Sprout” tea is harvested in the first flush, with the plucking standard of one bud and one leave. The material used is fine, small and full of white pekoe, looks just like the snow sprout. With the standard of plucking the finest part of the tea, it required seventy thousand piece of tea buds to make 500g of Tea, so there is only a limited production quantity every year. This batch of Tea is refreshing and crisp in its mouthfeel, it shows an elegant aroma with lingering floral notes and soft sweetness.

Types of Green Tea (Green-killing method): Hong Qing (烘青) – Baked Green Tea

Que She 雀舌, literally means “Sparrow’s Tongue”, which is named because of its small shape just like the sparrow’s tongue. It is a kind of flat shaped green tea, unlike other traditional green tea which is made of buds, sparrow’s tongue required slightly exposed buds, so its maturity is slightly higher than other bud tea, aroma is extremely unique, rich and slightly higher than other bud-shaped green tea, mouthfeel is also thicker with stronger Hui Gan.

The plucking standard of Que She is very strict, not all tea tree varieties can be used to make Que She, only small and medium sized leaf varieties is carefully selected. It is made of small and fat tea buds, all buds must be picked by hand , tea leaves need to be tender and in symmetrical shape. This Que She is from the famous tea mountain – Meng Ding Mountain in Ya’An, Sichuan, at an altitude of 1000-2000 meters. The newly harvested Spring Tea is very refreshing with sweet floral and light chestnut notes.

Tai Ping Hou Kui 太平猴魁, translated as Tai Ping Monkey King, is one of the 10 most famous Chinese Tea, with the longest and largest sized tea leaves among all kinds of green teas. Its name “Tai Ping” literally refers to its place of origin –  Tai Ping country, which is situated in Huang Shan of Anhui; and “Hou Kui” means “Monkey King”, as there is an old legend saying the tea is picked by Monkey in the “Monkey Pit”.

This year, we have chosen this first flush batch of Tai Ping Hou Kui from its core production area – Hou Keng Village. When we take the first sip of it, we were immediately impressed by its apparent and lingering orchid fragrance. It taste refreshing and elegant with orchid and light nutty notes, with sweet and long-lasting aftertaste. As it is made of mature leaves, it is relatively strong in taste and light in grassiness when comparing with other green tea, but it never show astringency at all, it can be re-steep for many times.

Lu An Gua Pian 六安瓜片 is one of the 10 most famous Chinese Tea, and It is the only tea in the world which is made of single leaf, without buds and stems. Lu An Gua Pian is considered a stronger, more flavorful and aromatic tea than other green tea.Lu An is one of the ancient tea areas in China. It has a well documented history of more than 2000 years. The core production area of Lu An Gua Pian is about dozens of kilometers around Qi Tou Mountain, including a total of 26 townships in Lu An. This batch of 2024 tea is from one of the core production area -Hong Shi Geng (红石埂) tea garden in Yu An district of Lu An country.  The tea garden has excellent ecology and unique environment for tea growing, it is surrounded with lots of bamboo trees and there are many local old variety of tea trees. We have chosen a small batch of the old variety this year. When comparing with the early sprout variety, we find this old variety is very impressive in its lingering floral fragrance and orchid notes in it, and because of its unique traditional baking process, you can also find a toasty and nutty notes in it.

Duyun Mao Jian 都勻毛尖 is one of the top 10 famous Chinese Tea, and one of the top 3 famous tea in Gui Zhou. It is also recorded in the Tea Bible by Lu Yu since Tang Dynasty. Duyun, located in the south of Gui Zhou, is the Qiannan Buyi and Miao Autonomous region in Guizhou, a beautiful and remote village where the ethnic minority group lived. “Du Yun” also means “Iridescent Clouds” in Miao language, as its name indicates, Du Yun is high in altitude, with misty and cloudy weather on the high mountain. As Duyun is relatively remote, and the quantity of Du Yun Mao Jian is relatively low, even though this tea is very famous, there are few tea lovers who have really tasted it. Therefore, we purchased a small batch of early spring tea for tea lovers to taste, also to allow more tea lovers to know and taste this historical famous tea.

Du Yun Mao Jian is also named as “fish hook tea” or “white hair tips” as the tea is small and curled like a fish hook with apparent white pekoe. it has a unique characteristic of “Three yellowish-green”, which means its dry leaves, tea soup and wet leaves are both in yellowish-green colour.  The young tea of this small batch is harvested in early spring, consisting of one bud one leaf, about 2cm long. The tea are tender and beautiful with a lot of white pekoe, as the content of amino acid is relatively high, it taste very sweet and umami. When you take a sip of the tea, it is soft and refreshing, with floral and nutty notes, you can also find a subtle corn fragrance with lingering “hui gan” aftertaste.

Yunnan Silver Strand, also called “Yin Si 銀絲” in Chinese, is a unique existence in the green tea world. When we drink the tea, we can find a trace of pu-erh fragrance. The tea leaves strips are tightly twisted and beautiful, covered with slivery white pekoe, which make it looks like the silver strand. It is harvested from a wild tea tree with a tree age of 50 to 100 years, in Wu Liang Mountain, Pu’er city of Yunnan.

Yunnan Silver Strand is a kind of Yunnan Green Tea, which can also be called “Dian Lv”. It is made of Yunnan Big Leaf Varietal, similar but different from raw pu-erh tea in its craftsmanship, as they are similar in its production process, but different in its green-killing step. Yunnan Silver Strand is a baked-green “Hong Qing” tea, which means it is baked for drying in low heat, in order to halt the oxidation of enzymes. On the other hand, raw puerh is a kind of Shai Qing tea, which mean it is being sun-dried in the green-killing step.

Emei Mountain Mao Feng Green Tea, derives its name from the distinctive “hairy peak” shape of its finely curled tea leaves, which contain some white pekoe in between. Harvested in the early spring from the renowned Emei Mountain in Emeishan City, Sichuan province, this tea benefits from the exceptional ecological environment of the mountain. Situated as the highest of China’s Four Sacred Buddhist Mountains and a UNESCO World Heritage Site since 1996 alongside the Leshan Giant Buddha, Emei Mountain offers cool and misty high-altitude climates that are ideal for tea cultivation.

This year’s Mao Feng green tea is apparent in its floral notes, the tea farmer describe this batch as “Flowery Mao Feng”. It boasts a delightful combination of floral notes, accompanied by a lingering sweetness. The tea leaves, when steeped, unfurl to reveal a vibrant green color, resulting in a clear and bright tea infusion. The surprising creaminess and smoothness of the mouthfeel, combined with the tea’s ability to retain its flowery aroma even after several steeps.
