Tea Journey: Exploring Jin Ji Mountain’s Huo Shan Yellow Tea

After several spring showers, the weather suddenly became warm and inviting. The mountains became lush, and even the sun blushed with delight. The local tea farmers say that this year’s spring tea arrived later than usual, but with the increasing daylight hours, tea bushes sprouted new buds at a lightning-fast pace. Our educational journey to explore the production of Huo Shan yellow tea proved to be a fruitful adventure.

Our first stop on the Huo Shan yellow tea journey was the Jin Ji Shan tea plantation, one of the core production areas.

As we ascended the mountain, we encountered tea pickers in the midst of their harvest. We decided to pause and join them in plucking fresh yellow tea leaves. Following their expert guidance, we learned the meticulous standards of plucking one bud and one leaf. Before our hands could even fill up, we found ourselves drenched in sweat. In that moment, we truly understood the hardships faced by the tea pickers. Perhaps it’s the grace of tea that keeps a genuine and warm smile on their faces.

Along the winding path towards the tea plantation, we came across a monument dedicated to the divine tea. Resting in a pavilion nearby, we had the opportunity to chat with Captain Chen, a local resident. From him, we learned that in close proximity to the “divine tea monument”, there stood a remarkable tea tree. This particular tree, known as the “Divine Tea Tree,” stood out from the rest due to its age and abundant growth of tea leaves.

As we descended from the mountains and acquired freshly plucked tea leaves from the farmers, a distinct mountainous aroma filled the air.

Later that evening, we commenced our study of Huo Shan yellow tea production at the workshop of Ms. Cheng Xian Ciong, a master inheritor of the craft of making yellow tea. The unique production process of Huo Shan yellow tea, known as “Men Huang” in Chinese, sets it apart. Unlike green tea or black tea, Huo Shan yellow tea offers a taste that combines the freshness of green tea with the sweetness of black tea. 

During the tea frying process, we paid special attention to the delicate treatment of Huo Shan yellow buds. Compared to the pan-frying technique used for Lu’an melon seeds tea, the movements involved in frying Huo Shan yellow tea were much gentler.

Despite the fatigue from our day-long trek up the tea mountain, our enthusiasm for tea frying remained unwavering. From withering to shaping, frying to oxidation, we persisted until midnight. Finally, we witnessed the fruits of our labor—handcrafted Huo Shan yellow tea.

Despite the physical exhaustion from the previous day’s activities, our excitement propelled us out of bed before the first rays of sunlight touched the mountain peaks. The aroma of freshly brewed tea wafted through the air, invigorating our senses and preparing us for the enlightening day ahead.

In the tranquil tea room, we had the privilege of sitting down with Mr. Cheng, a master inheritor of the craft of making yellow tea. With profound expertise and a genuine passion for tea, he guided us through the art of tasting and understanding the subtle differences between the three grades of Huo Shan Yellow Tea.

Each cup of tea was a revelation, offering a unique sensory experience. Mr. Cheng shared his wisdom, enlightening us about the factors that contribute to the flavors and aromas of the tea. From the delicate floral notes of the highest grade to the robust and earthy undertones of the lower grades, we learned to discern the intricate characteristics that set them apart.

The tasting session went beyond the realm of taste. It became an opportunity to delve deeper into the cultural significance of Huo Shan Yellow Tea and its connection to the land and people of Jin Ji Mountain. Mr. Cheng’s anecdotes and insights painted a vivid picture of the centuries-old tea-making traditions, fostering a greater appreciation for the tea in our hearts.

Our journey provided an immersive experience into the world of Huo Shan yellow tea production. From visiting the renowned Jin Ji Shan tea plantation to witnessing the dedication of tea pickers and learning the intricate art of tea production, every step was a revelation. The trip not only deepened our understanding of the tea-making process but also allowed us to appreciate the beauty and complexity of Huo Shan yellow tea. We returned home with a newfound respect for the tea farmers and a desire to savor the exceptional flavors of Huo Shan yellow tea, a true treasure of the region.
