What can I learn from this 'Master Tasting Collection' #7 ?

Fuding is known to be the “heaven of White Tea”, it is located in Fujian Province in China. Fuding White Tea are classified into four grades according to the picking grades, including the first grade “Silver Needle”, second grade “White Peony”, third grade “Gong Mei” and fourth grade “Shou Mei”. You can taste-test these four grade of Fuding White Tea, and learn what is the difference between each grading, from the dry leaves, aroma to the taste.

(1) 1st Grade: Premium Fuding Silver Needle White Tea – 2019

The highest grade of Fuding White Tea. Is is made of  one bud with no leaves. It is plucked in the earliest flush of Spring Tea, hand-plucking the “needle-like” tea buds with conspicuous silvery tea hair. The fineness of tea buds taste fresh,smooth and mellow, with long-lasting sweet floral finish and aftertaste.

(2) 2nd Grade: White Peony “Bai Mu Dan” White Tea – 2020

The second grade of Fuding White Tea, plucking the tea buds with 1-2 leaves. It is plucked in the first flush of Spring Tea. The dry leaves are light green with downy silvery buds in between. Refreshing aroma ,smooth and mellow, with long-lasting sweet floral finish and aftertaste.

(3) 3rd Grade: Gong Mei White Tea – 2020

The third Grade of Fuding White Tea, right below White Peony and above Shou Mei. Dry leaves are using tea leaves with 1 bud and 2-3 leaves, green with some downy pekoe in between. The new Gong Mei is slightly grassy but flowery with refreshing aroma. This new spring white tea definitely represent the freshness from white Tea.

(4) 4th Grade: Old Shou Mei White Tea – 2015

The Fourth Grade of Fuding White Tea. slightly aged Shou Mei, Plucking the tea buds with 2-3 leaves. Stored for almost five years resulting in higher sweetness and notes of floral and fruit. Suitable and valuable choice for aging, remarkable smoothness and sweetness will be resulted with longer age.

Simplicity of White Tea – Simplest Making process among all kind of Tea

The making process of White Tea is simple, only requires withering and drying after picking the tea leaves. We took the below picture in the organic tea farm in Panxi last year. Although the process is simple, skills is still very important, like time controlling, humidity controlling, change the angle for placing the tea leaves for sun-drying… all make it the best way to show the simple beauty and natural taste from the Fuding White Tea.
